- 2 Cups fusilli pasta
- ¾ Cup pumpkin
- ¾ Cup shredded cooked chicken
- 10 Cherry tomatoes, cut in half
- 3 Spring onions, finely chopped
- A little freshly ground
- black pepper
- ½ Cup of crumbled feta
- ½ Fresh spinach
- Cook the pasta according to the instructions on the pack. Once cooked, drain and rinse.
- Steam, boil or bake pumpkin.
- In a large bowl, mix the chicken, cherry tomatoes, pumpkin, feta and spinach.
