Potato and leek soup (Serves 3 – 4)

What you'll need

  • 6 medium potatoes, peeled and sliced
  • 4 medium to large leeks, washed and sliced
  • 1/2 celery stalk, sliced
  • 1/2 onion, chopped
  • 2 cups of vegetable stock or broth
  • 1 1/4 cups of milk
  • 2 tablespoons olive oil
  • Salt & pepper
  • 1/4 cup of half & half (optional)

How to cook it

Melt the olive oil over medium heat in a large soup pan. Add the leeks and potatoes, cover, and cook for roughly 5 minutes, stirring frequently (careful they don't stick). Add the stock or broth, half a cup of milk, parsley, salt and pepper. Reduce the heat to low, cover, and cook until the vegetables are very soft, about 25 to 30 minutes. Use your blender until smooth. If you don't have a blender just use used a masher to break it a little. Stir in the remaining cup of milk.  Finally, season to taste with salt and pepper. Sit back and enjoy.
