Healthy breakfast recipes

Ok so we know time might be a bit tight with the morning rush during the week but we think these breakfast recipes would be a nice little treat at the weekend.

Creamy wheat cereal with bananas and almonds (Serves 4)

What you'll need:

  • 2 cups of low fat milk
  • 2 cups of water
  • 1 cup cream of wheat (also known as farina)
  • 2 large bananas
  • 1/4 cup of dried banana chips
  • 2 tablespoons of sliced almonds
  • 1/2 cup of pure maple syrup (can use 1/3 cup)

How to prepare it:

Chop enough bananas to equal 1 cup. Slice remaining banana and leave to the side.Combine 2 cups water and low fat milk in a saucepan and bring to a boil. Gradually add cream of wheat and whisk constantly until mixture thickens (this should take about 4 minutes). Next, stir the maple syrup and chopped banana in with cereal. Divide cereal among 4 bowls. Garnish each serving with reserved sliced banana, dried banana chips and toasted almonds. Add cold low-fat milk to individual tastes and enjoy.

Honey and banana muffins with ricotta (Serves 4)

What You'll Need:

  • 4 English Muffins
  • 8 tablespoons of fresh ricotta
  • 2 large bananas, thinly sliced (blueberries, strawberries and grated apple are also nice)
  • 10 tablespoons of honey + extra to serve

How to prepare it:

Cut the muffins in half and toast until crisp. Spread the ricotta over the toasted muffins. Arrange the sliced banana on top and drizzle over honey to serve.

Skinny eggs with ham on bagels (Serves 4)

What You'll Need:

  • 2 wholemeal bagels cut in half
  • 100g cherry tomatoes
  • 4 eggs
  • 4 egg whites
  • 100g shaved reduced fat ham
  • 125ml reduced fat milk

How to prepare it:

Cut the cherry tomatoes in half and grill on a non stick baking tray until they are soft and the skins begin to shrink a little. Remove and keep warm. Whisk the eggs, egg whites and evaporated milk in a bowl and season with a little white pepper. Pour the egg mixture into a non stick fry pan and cook over a low heat until the egg starts to set. Stir gently until just cooked. Be careful not to overcook. Toast the bagels and top the bases with the scrambled eggs, cherry tomatoes and a little of the shaved ham.
