HEALTHY MUESLI BARS IDEAL FOR LUNCHBOXES

Nutty muesli bars

Muesli bars often look healthy at the supermarket, but when you look at what’s in them they are full of fat and sugar. So why not make your own for your kids lunch?

What you’ll need:

Ingredients

  • 1 Cup of rolled oats
  • 1 Cup of desiccated coconut
  • ¼ Cup of sesame seeds
  • ½ Cup of sunflower kernels
  • ½ Cup of pumpkin seeds
  • 1 Cup of sultanas
  • ½ Cup of butter
  • ½ Cup of honey
  • 1/8 Cup of brown sugar

Method

  1. In a frying pan, mix the oats, coconut, sesame seeds, sunflower kernels and pumpkin seeds on a medium heat until golden brown. Set aside to cool then mix in your sultanas.
  2. Cook your butter, sugar and honey in a saucepan over a medium heat, stirring constantly, then add to your dry ingredients and mix thoroughly.
  3. Spoon your mixture into a lined baking tray and leave to cool.
  4. Cut into snack sized bars.
