If you’ve got a couple of hard-boiled eggs in the fridge, these delicious brekky pizzas are great for school day breakfast.
What you’ll need:
- 4 English muffins
- 1 Sliced tomato
- 2 Eggs
- ½ Cup grated mozzarella
- Tomato sauce
- Hard boil your eggs.
- Toast your English muffins then lay the eight halves in a baking tray
- Spread tomato sauce on each pizza base, add a slice of tomato, a slice of egg and grated mozzarella. Sprinkle with oregano.
- Bake for around 5 minutes or until the cheese is melted.
