Something a little different for those school lunches
Making lunch every day of the school year can be a little tiresome so we came up with some healthy ideas to keep the kids (and mothers) happy.

Chicken and Hummus Wrap (Makes 1 serving)

Wraps are versatile and great for lunch. This wrap is full of fresh salad, chicken and low fat hummus. It's super healthy and delicious. What You'll Need
  • 1 wholemeal tortilla wrap
  • A handful of rocket
  • 2 tablespoons low fat hummus
  • 70g chicken breast, grilled without skin and roughly sliced
  • ½ tomato, sliced
  • ¼ red onion, sliced
How to make them Lay the tortilla wrap on a chopping board and spread the hummus in a line down the middle. Put the chicken on top of the hummus and arrange the red onion, tomato and rocket over the top. Carefully roll up the tortilla and you're done!

Ham tortilla pinwheels (Makes 2 servings)

Tortilla pinwheels are a great sandwich alternative for the school lunch box. What You'll Need
  • 1 multigrain tortilla
  • 2 tablespoons light cream cheese
  • 2 thin slices leg ham
How to make them Spread tortilla evenly with cream cheese and avocado. Top with ham. Roll the tortilla up tightly and then slice on an angle.

Dried fruit pikelets (Makes 2 servings)

What You'll Need
  • 1/3 cup milk
  • 1/2 egg
  • 1/2 cup self-raising flour
  • 1/2 tablespoon caster sugar
  • 1/2 teaspoon vanilla essence
  • 1/4 cup chopped dried apricots & sultanas
  • olive oil
  • 1/2 cup Nutella spread, to serve
How to make them Sift the flour and sugar into a large bowl. Make a well in the centre. Whisk milk, vanilla and egg in a jug with a fork until well mixed. Pour milk mixture into with the flour and sugar. Stir gently until combined. Stir in dried fruit (don't stir too vigorously, or pikelets will be tough). Heat a non-stick frying pan over medium heat. Spray lightly with oil. Drop a tablespoonful of batter into frying pan, pressing lightly to spread. Cook for roughly 60 seconds, or until small bubbles appear on the surface. Turn and cook for a further 30 seconds, or until golden and cooked through. Place onto a wire rack. Repeat with remaining batter. Finally spread a little Nutella to sandwich together.
