WRAP AND ROLL FOR A LUNCHBOX SURPRISE

Wrap and roll

These are something different for school lunches, but they’re really tasty. Substitute whatever salad your kids are more likely to eat, and they’ll be laughing all the way past the tuck-shop. If you make a big batch of meatballs, you can freeze them and grab them whenever you need.

What you’ll need:

Ingredients

  • 1 Small onion, diced
  • 250g Beef mince
  • 1 Egg, lightly whisked
  • 1 Tablespoon tomato paste
  • 4 Wholemeal pita bread
  • Small butter lettuce leaves
  • 12 Cherry tomatoes, chopped
  • 1 Cucumber, thinly sliced
  • ½ Capsicum

Method

  1. Add beef mince, egg and tomato paste and onion and stir until well combined. Make into small balls and chill for 30 minutes.
  2. Fry meatballs in a large non-stick frying pan on a high heat until cooked through.
  3. Fill each pita with salad and meatballs then wrap.
